The extensive-type cultivation of the tomato takes place in open fields under Mediterranean sun. The farmers, gathered in the Organization of Producers (OP), follow the requirements of the Integrated Production Discipline for the Conventional Cultivation Method and those dictated by the Regulation CE 834/07 concerning the cultivation method for organic farming.

    Tomatoes are washed, sorted, and processed in the following ways: steam peeled, cut into regular pieces (diced), and drained for seed removal, chopped, and hot break juice extraction, evaporated
    The final product (diced plus juice) is termally treated and aseptically filled and chilled.
