Oregano (Origanum vulgare)
Oregano is native to Mediterranean countries and belongs to the Labiatae family. It grows wild in dry places, even in mountains. Traditionally spontaneous, it is cultivated as an aromatic plant and for therapeutic use. It is harvested two or three times a year during summer. The most common variety – the Origanum vulgare – is widespread in Italy, the Asian peninsula, and the Balkan area.

Thyme (Thymus vulgaris)
Thyme, like marjoram and basil, is a member of the Labiatae family and is grown in the Mediterranean (particularly Turkey, Morocco, Tunisia, Spain, and Albania) and the North East.

Sage (Salvia officinalis)
Sage belongs to the Labiatae family like oregano. It grows wild in Mediterranean countries and southern Europe. Often cultivated for its use as an aromatic herb, but also for therapeutic purposes. The world’s largest producer is Turkey, with wide cultivations.

Rosemary(Rosmarinus officinalis)
Rosemary, like salvia officinalis belongs to the Labiatae family. It is native to Mediterranean countries and grows wild in Italy, France, Corsica, Balearic Islands, Spain, Turkey, Greece, Albania, Tunisia, Morocco, Algeria and Libya. It’s cultivated either as an aromatic plant or as an essence plant.
Applications:Herbal teas and culinary uses in food industry as well as it is used in pharmaceutical industry.

Cumin (Cuminum Cyminum)
Cumin is a biennial aromatic plant from the Umbelliferae family. It’s seed is an oblong-shaped, sharp flavored, and dark-colored aromatic spice. At present, India, China, Iran, Turkey, and Syria are the major producers and exporters of cumin seed worldwide.
Applications: With its flavor-enhancing and health benefits used in barbecue sauces, snack food, beverages, liquors, and for flavoring cheese.
Origin: Cumin seeds, whole or ground, origin Turkey.
Anise (Pimpinelle anisum)
The anise plant, Pimpinella anisum, or anason, as it’s known in Turkey, grows rapidly to a height of two to three feet. It has beautiful, circular, feathery leaves and a canopy of small white flowers. The flowers are replaced by crescent-shaped seeds, aromatic, full of licorice flavor and piney undertones. The anise plant belongs to the same family of dill, caraway, coriander, cumin, and fennel.
Applications: flavoring baked goods such as biscuits, cakes, sweet rolls and bread, soups, beverages and confectionery (e.g., licorice). It is also used in the preparation of cordials and liqueurs. Several Mediterranean alcoholic drinks are flavored with anise.

(Foeniculum vulgare)
Fennel belongs to the Umbelliferae family, as cumin, and is native to the Mediterranean area. This crop is grown in high altitudes where the relative humidity values are low. Its most used parts are the leaves of the basal stem, fleshy and full of water, which are improperly called “bulbs” and are eaten as a vegetable. Its fruits, called seeds, are widely used as a spice in many recipes.
Applications: Fennel is generally used in herbal teas and baby food. It can also be used as a spice flavoring in some specific recipes.
